There are many variations of adobo, with each region and family having their own unique recipe. However, the basic ingredients remain the same: vinegar, soy sauce, garlic, bay leaves, and peppercorns.


Here is a recipe for chicken adobo:


  • 1  1/2 lbs chicken thighs, bone-in and skin-on
  • 1/2 cup white vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 1 head garlic, minced
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 2 tbsp vegetable oil

Instructions:


1. In a large pot or Dutch oven, heat the oil over medium-high heat. Add the chicken and cook until browned on both sides.

2. Add the garlic and cook until fragrant, about 1-2 minutes.

3. Add the vinegar, soy sauce, water, bay leaves, and peppercorns. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes or until the chicken is tender and cooked through.

4. Serve with steamed rice and garnish with chopped scallions or cilantro, if desired.
